Sugar Free Wild Apple Cinnamon Jam

  • 4 pounds wild apples cored and chopped
  • 2 tablespoons ground cinnamon
  • 1 tablespoon lemon juice
  • 1/2 cup water
  • 1 packet sugar-free pectin
  • 2 tablespoons apple cider vinegar
  • 1/4 teaspoon salt
  • 2 tablespoons honey or maple syrup optional, for extra sweetness

Instructions
 

  • Wash, core, and chop the wild apples. Leave the skins on for nutrients and natural pectin.
  • Place chopped apples, lemon juice, and water in a large heavy-bottomed pot. Cook over medium heat for 15 minutes, stirring occasionally.
  • Add ground cinnamon, salt, and apple cider vinegar. Continue to cook for another 10 minutes until apples soften and break down.
  • Whisk in the sugar-free pectin slowly, avoiding lumps. This helps thicken the jam properly.
  • Simmer the mixture for 15–20 minutes, stirring frequently, until it thickens and coats the back of a spoon. Use a candy thermometer to ensure the jam reaches 220°F (104°C).
  • Pour the hot jam into sterilized jars, leaving 1/4 inch headspace. Process jars in a boiling water bath for 10 minutes for long-term storage.

Notes

Use a mix of tart and sweet wild apples for more complex flavor. Customize with ginger, vanilla, or nuts for variation. Always sterilize jars and test the jam on a chilled plate for doneness.
