Ingredients
  

Cornbread Batter

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 large eggs lightly beaten
  • 4 tbsp unsalted butter melted

Honey Butter Glaze

  • 4 tbsp unsalted butter softened
  • 3 tbsp honey
  • 1/4 tsp salt

Instructions
 

  • Preheat the oven to 375°F (190°C) or heat oil to 350°F (175°C) for frying.
  • In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, sugar, and salt.
  • In another bowl, mix buttermilk, eggs, and melted butter.
  • Combine the wet and dry ingredients. Stir until just mixed; do not overmix.
  • Using a spoon or small ice cream scoop, portion the batter into small balls.
  • Place on a greased baking sheet and bake for 10–12 minutes until golden, or fry until crispy and golden brown.
  • For the honey butter glaze: Combine softened butter, honey, and salt until smooth.
  • Brush the poppers with the honey butter glaze immediately after baking or frying.

Notes

For variations, add jalapeños, cheddar cheese, or a sprinkle of chili powder to the batter. For a vegan option, use plant-based milk and flax eggs.
