  • 1 cup buttermilk
  • 2 large eggs
  • 1/4 cup unsalted butter melted

For the Honey Butter Glaze:

  • 1/4 cup unsalted butter softened
  • 2 tbsp honey

Instructions

Mix the Dry Ingredients:

  • In a medium-sized bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  •

Combine Wet Ingredients:

  • In a separate bowl, whisk the buttermilk, eggs, melted butter, and honey until well combined.

Prepare the Batter:

  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Avoid overmixing for a light texture.

Shape the Poppers:

  • Using a spoon or small scoop, drop small portions of the batter onto a parchment-lined baking sheet or into a mini muffin tin.
  •

Bake:

  • Preheat the oven to 375°F (190°C) and bake the poppers for 12-15 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

Make the Glaze:

  • While the poppers bake, mix the softened butter and honey together until smooth.
  •

Glaze and Serve:

  • Once the poppers are out of the oven, brush them generously with the honey butter glaze. Serve warm for the best flavor.
