- 2 pounds ground beef 80/20
- 1 large onion diced
- 2 green bell peppers diced
- 8 ounces mushrooms sliced
- 3 cloves garlic minced
- 2 eggs
- 1 cup breadcrumbs
- 1/4 cup Worcestershire sauce
- 8 slices provolone cheese
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 tablespoon fresh parsley chopped
Preheat oven to 375°F (190°C).
Heat olive oil in a large skillet over medium heat.
Sauté onions, peppers, and mushrooms until softened (8-10 minutes).
Add garlic and cook for 1 minute. Set aside to cool.
In a large bowl, combine ground beef, eggs, breadcrumbs, Worcestershire sauce, salt, pepper, and oregano.
Fold in cooled vegetable mixture until well combined.
Transfer to a 9x5 inch loaf pan.
Bake for 45 minutes.
Top with provolone cheese slices.
Bake additional 15 minutes until cheese is melted and bubbly.
Let rest 10 minutes before slicing.
Garnish with fresh parsley.
Drain excess fat at 45-minute mark before adding cheese
Use a meat thermometer to ensure internal temperature reaches 160°F
Let vegetables cool completely before mixing with meat
