Philly Cheesesteak Meatloaf

Ingredients
  

  • 2 pounds ground beef 80/20
  • 1 large onion diced
  • 2 green bell peppers diced
  • 8 ounces mushrooms sliced
  • 3 cloves garlic minced
  • 2 eggs
  • 1 cup breadcrumbs
  • 1/4 cup Worcestershire sauce
  • 8 slices provolone cheese
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Heat olive oil in a large skillet over medium heat.
  • Sauté onions, peppers, and mushrooms until softened (8-10 minutes).
  • Add garlic and cook for 1 minute. Set aside to cool.
  • In a large bowl, combine ground beef, eggs, breadcrumbs, Worcestershire sauce, salt, pepper, and oregano.
  • Fold in cooled vegetable mixture until well combined.
  • Transfer to a 9x5 inch loaf pan.
  • Bake for 45 minutes.
  • Top with provolone cheese slices.
  • Bake additional 15 minutes until cheese is melted and bubbly.
  • Let rest 10 minutes before slicing.
  • Garnish with fresh parsley.

Notes

Drain excess fat at 45-minute mark before adding cheese
Use a meat thermometer to ensure internal temperature reaches 160°F
Let vegetables cool completely before mixing with meat
