Preheat oven to 375°F (190°C).
Cut peppers lengthwise, remove seeds and membranes.
In a large skillet, cook chopped bacon until crispy. Remove and set aside.
In the same pan with bacon fat, sauté mushrooms and onions until softened (5-7 minutes).
Add garlic, cook for 1 minute.
Add ground beef, cook until browned (8-10 minutes).
Drain excess fat if desired.
Stir in BBQ sauce, half the bacon, salt, pepper, and paprika.
Fill pepper halves with meat mixture.
Top with shredded cheese and remaining bacon.
Bake for 30-35 minutes until peppers are tender and cheese is melted.
Garnish with fresh parsley.
