Ingredients
  

  • 6 large bell peppers any color
  • 1 pound ground beef 80/20
  • 8 slices bacon chopped
  • 8 ounces mushrooms finely chopped
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 cup BBQ sauce
  • 2 cups shredded cheddar cheese
  • 1/4 cup fresh parsley chopped
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon olive oil

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Cut peppers lengthwise, remove seeds and membranes.
  • In a large skillet, cook chopped bacon until crispy. Remove and set aside.
  • In the same pan with bacon fat, sauté mushrooms and onions until softened (5-7 minutes).
  • Add garlic, cook for 1 minute.
  • Add ground beef, cook until browned (8-10 minutes).
  • Drain excess fat if desired.
  • Stir in BBQ sauce, half the bacon, salt, pepper, and paprika.
  • Fill pepper halves with meat mixture.
  • Top with shredded cheese and remaining bacon.
  • Bake for 30-35 minutes until peppers are tender and cheese is melted.
  • Garnish with fresh parsley.
