Ingredients
  

Pasta Base

  • 1 pound linguine or spaghetti high-quality
  • 3 tbsp extra virgin olive oil
  • 4 cloves garlic minced
  • 1 shallot finely chopped
  • 0.5 cup dry white wine

Royal Sauce

  • 1 cup heavy cream
  • 0.5 cup Parmesan cheese freshly grated
  • 2 tbsp lemon juice fresh
  • 1 tbsp lemon zest
  • 0.25 cup fresh basil chopped
  • salt and pepper to taste

Optional Additions

  • 1 cup cherry tomatoes halved
  • 4 oz prosciutto torn into pieces
  • 0.5 cup toasted pine nuts
  • fresh arugula for garnish

Instructions
 

  • Bring a large pot of salted water to a boil and cook pasta until al dente. Reserve 1 cup of pasta water before draining.
  • In a large skillet, heat olive oil over medium heat. Add garlic and shallot, sauté for 2–3 minutes until fragrant.
  • Pour in white wine and simmer until reduced by half, about 3–4 minutes.
  • Add heavy cream and stir to combine, keeping heat at medium to prevent curdling.
  • Add drained pasta to the sauce. Stir in Parmesan, lemon juice, and zest. Use pasta water to adjust consistency.
  • Season with salt and pepper. Fold in basil and any optional ingredients like cherry tomatoes or prosciutto. Garnish with arugula and serve warm.

Notes

Substitute cream with cashew cream and Parmesan with nutritional yeast for a dairy-free version. Add grilled chicken, shrimp, or seasonal vegetables for variety.
