Ingredients
  

Pizza Base

  • 2 cups fresh baby spinach
  • 1 tbsp extra virgin olive oil
  • 2 cloves garlic minced
  • 1/4 tsp red pepper flakes optional
  • salt and fresh ground black pepper to taste

Pizza Toppings

  • 1 cup low-carb marinara sauce no added sugar
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup freshly grated Parmesan cheese
  • 18-20 slices pepperoni
  • 1/4 cup sliced black olives
  • 1/4 cup sliced green bell pepper
  • 1/4 cup sliced mushrooms

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • Heat olive oil in a skillet over medium heat. Add garlic and cook until fragrant, about 30 seconds.
  • Add spinach and red pepper flakes. Sauté until wilted. Season with salt and pepper.
  • Transfer spinach to the base of oven-safe bowls.
  • Spoon marinara sauce over the spinach, sprinkle half of the mozzarella, and arrange pepperoni, olives, peppers, and mushrooms on top.
  • Top with remaining mozzarella and Parmesan cheese.
  • Place bowls on a baking sheet and bake for 15-18 minutes until cheese is bubbly and golden.
  • Optional: Broil for 1-2 minutes for extra crispiness, watching carefully to avoid burning.
  • Let rest for 3-5 minutes before serving.
