For the Sugar Cookie Base:

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt

For the Frosting:

  • 8 ounces cream cheese softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract

For the Toppings:

  • Sliced fresh fruits e.g., strawberries, kiwis, blueberries, and peaches
  • Optional: shredded coconut or sprinkles for decoration

Instructions
 

Prepare the Sugar Cookie Base:

  • Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream butter and sugar until light and fluffy. Add the egg and vanilla, mixing until combined.
  • Gradually add flour, baking powder, and salt, mixing until a dough forms.
  • Roll the dough out to ¼-inch thickness on a floured surface. Use an egg-shaped cutter to cut cookies, and place them on the baking sheet.
  • Bake for 8–10 minutes, then cool completely.

Prepare the Frosting:

  • Beat cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

Assemble the Fruit Pizzas:

  • Spread frosting over the cooled cookies. Decorate with fresh fruit to create colorful Easter egg patterns.
