Chicken Ham and Cheese Sticks
- 2 large boneless, skinless chicken breasts
- 8 slices ham
- 8 slices cheese cheddar, mozzarella, or Swiss
- 1 cup all-purpose flour
- 3 eggs beaten
- 2 cups panko breadcrumbs
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- vegetable oil for frying
Place the chicken breasts between two pieces of plastic wrap and pound them to an even 1/4-inch thickness.
Cut each flattened chicken breast into 4 equal strips.
Place a slice of ham and a slice of cheese on top of each chicken strip.
Roll up each chicken strip tightly, securing with toothpicks if necessary.
In a shallow bowl, mix the flour with salt and pepper.
In another bowl, beat the eggs.
In a third bowl, combine the panko breadcrumbs with garlic powder and paprika.
Dredge each chicken roll in flour, then dip in beaten eggs, and finally coat in the seasoned breadcrumbs.
Heat oil in a large skillet over medium heat.
Fry the chicken rolls until golden brown on all sides and the chicken is cooked through, about 3-4 minutes per side.
Transfer to a paper towel-lined plate to drain excess oil.
Remove toothpicks before serving.
