Ingredients
  

Chicken Ham and Cheese Sticks

  • 2 large boneless, skinless chicken breasts
  • 8 slices ham
  • 8 slices cheese cheddar, mozzarella, or Swiss
  • 1 cup all-purpose flour
  • 3 eggs beaten
  • 2 cups panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • vegetable oil for frying

Instructions
 

  • Place the chicken breasts between two pieces of plastic wrap and pound them to an even 1/4-inch thickness.
  • Cut each flattened chicken breast into 4 equal strips.
  • Place a slice of ham and a slice of cheese on top of each chicken strip.
  • Roll up each chicken strip tightly, securing with toothpicks if necessary.
  • In a shallow bowl, mix the flour with salt and pepper.
  • In another bowl, beat the eggs.
  • In a third bowl, combine the panko breadcrumbs with garlic powder and paprika.
  • Dredge each chicken roll in flour, then dip in beaten eggs, and finally coat in the seasoned breadcrumbs.
  • Heat oil in a large skillet over medium heat.
  • Fry the chicken rolls until golden brown on all sides and the chicken is cooked through, about 3-4 minutes per side.
  • Transfer to a paper towel-lined plate to drain excess oil.
  • Remove toothpicks before serving.

Notes

These Chicken Ham and Cheese Sticks can be prepared ahead of time and stored in the refrigerator before cooking. For a healthier version, bake at 400°F for 20-25 minutes.
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in an oven at 350°F for 10-15 minutes or air fry at 350°F for 3-4 minutes for maximum crispiness.
