Ingredients
  

  • Chicken Breasts boneless, skinless: 4 medium-sized
  • Bell Peppers: 1 red 1 yellow, 1 green, thinly sliced
  • Red Onion: 1 medium thinly sliced
  • Fajita Seasoning: 2 tablespoons store-bought or homemade
  • Olive Oil: 2 tablespoons
  • Lime Juice: 1 tablespoon optional, for extra freshness
  • Shredded Cheese: 1 ½ cups Mexican blend, cheddar, or Monterey Jack
  • Salt and Pepper: To taste
  • Fresh Cilantro: For garnish optional

Instructions
 

Preheat the Oven:

  • Set your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

2. Season the Chicken:

  • Pat the chicken breasts dry, then season both sides with fajita seasoning, salt, and pepper.

3. Assemble the Dish:

  • Place the chicken breasts in the baking dish. Arrange the sliced bell peppers and onions around and on top of the chicken. Drizzle olive oil and lime juice over the entire dish. Toss the vegetables lightly to coat evenly.

4. Bake the Chicken:

  • Cover the dish with aluminum foil and bake in the oven for 25 minutes.

5. Add Cheese and Finish Baking:

  • Remove the foil, sprinkle shredded cheese evenly over the chicken and vegetables, and return to the oven. Bake uncovered for another 10-15 minutes, or until the cheese is bubbly and the chicken reaches an internal temperature of 165°F (74°C).

6. Serve and Enjoy:

  • Garnish with fresh cilantro and serve immediately with your favorite sides such as tortillas, rice, or a fresh salad.
