For the Bars:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • teaspoons ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 3 large eggs
  • cups granulated sugar
  • ¾ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups finely grated carrots
  • ½ cup chopped walnuts optional

For the Frosting:

  • 8 oz cream cheese softened
  • ½ cup unsalted butter softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

  • Preheat oven to 350°F (175°C). Line 9x13-inch pan with parchment.
  • Mix dry ingredients: flour, baking powder, spices, salt.
  • Beat eggs, sugar, oil, vanilla until combined.
  • Stir dry ingredients into wet until just mixed.
  • Fold in carrots and nuts.
  • Bake 28-32 minutes until done.
  • Cool completely.
  • Beat frosting ingredients until smooth.
  • Frost cooled bars.
