Ingredients
  

Soup Base

  • 2 tbsp olive oil
  • 2 large onions diced
  • 2-3 garlic cloves minced
  • 2 green bell peppers diced
  • 2-3 carrots sliced
  • 1 bunch celery chopped
  • 1 head cabbage chopped
  • 1-2 cans diced tomatoes 14.5 oz each
  • 8 cups vegetable or chicken broth low sodium

Seasoning

  • 1 tbsp Italian seasoning
  • salt and pepper to taste
  • red pepper flakes optional, for heat

Instructions
 

  • Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until fragrant (about 3 minutes).
  • Add bell peppers, carrots, and celery. Cook for 5 minutes, stirring occasionally.
  • Add chopped cabbage and cook for another 5 minutes until slightly softened.
  • Pour in the diced tomatoes and broth.
  • Season with Italian seasoning, salt, pepper, and red pepper flakes (if using).
  • Bring to a boil, then reduce heat to low and simmer for 30-40 minutes until all vegetables are tender.
  • Taste and adjust seasonings as needed before serving.

Customize this soup by adding lean proteins like chicken or beans, or include grains like brown rice or quinoa for a heartier meal.
