Ingredients
  

Butter Grilled Wahoo Steaks

  • 4 wahoo steaks 6-8 oz each, 1-inch thick
  • 6 tbsp unsalted butter softened
  • 3 garlic cloves minced
  • 2 tbsp lemon juice fresh
  • 1 tbsp fresh parsley chopped
  • 1 tsp fresh thyme leaves
  • 1 tsp sea salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil
  • lemon wedges for serving

Instructions
 

  • Remove wahoo steaks from refrigerator 30 minutes before grilling to reach room temperature.
  • Preheat your grill to medium-high heat (400°F).
  • Mix softened butter, minced garlic, lemon juice, parsley, and thyme in a bowl to create herb compound butter.
  • Pat wahoo steaks dry and brush with olive oil on both sides. Season with salt and pepper.
  • Oil grill grates. Grill steaks for 4-5 minutes per side, applying compound butter after flipping.
  • Grill until internal temperature reaches 145°F. Let rest 2 minutes before serving with lemon wedges.

Notes

Use a meat thermometer to avoid overcooking. Compound butter can be frozen for future use.
