Instructions
Remove wahoo steaks from refrigerator 30 minutes before grilling to reach room temperature.
Preheat your grill to medium-high heat (400°F).
Mix softened butter, minced garlic, lemon juice, parsley, and thyme in a bowl to create herb compound butter.
Pat wahoo steaks dry and brush with olive oil on both sides. Season with salt and pepper.
Oil grill grates. Grill steaks for 4-5 minutes per side, applying compound butter after flipping.
Grill until internal temperature reaches 145°F. Let rest 2 minutes before serving with lemon wedges.
Notes
