Sandwich Ingredients
- 2 slices sourdough or artisan bread
- 1/2 cup fresh blackberries
- 1 tbsp balsamic vinegar
- 1 tsp honey
- 2 tbsp unsalted butter softened
- 3 oz brie cheese
- 1 tbsp chopped fresh basil optional
- 1 tsp olive oil
In a small saucepan over medium heat, add blackberries, balsamic vinegar, and honey. Cook for 3-5 minutes, gently mashing the berries until they soften and the mixture thickens. Remove from heat and set aside.
Spread a layer of softened butter on one side of each bread slice. Flip the slices over and spread a generous amount of brie cheese on the unbuttered sides.
Spoon the balsamic blackberry mixture over one slice of the cheese-covered bread. Sprinkle fresh basil on top for an extra layer of flavor.
Heat a skillet or griddle over medium heat with a teaspoon of olive oil. Place the sandwich in the pan, buttered side down. Cook for about 3-4 minutes on each side or until golden brown and the cheese is melted.
Remove from the skillet, slice in half, and enjoy while warm!
If using frozen blackberries, thaw them slightly and cook a bit longer to reduce excess moisture.
For a variation, try using goat cheese, cream cheese, or sharp cheddar for a different flavor profile.
