Ingredients
4 boneless, skinless chicken breasts
1 lb baby potatoes, halved or quartered
1 packet ranch seasoning mix
1 cup chicken broth
1/2 cup cream cheese, softened
1/2 cup grated Parmesan cheese (optional)
1 tsp garlic powder
1/2 tsp smoked paprika (optional)
Salt and black pepper to taste
Fresh parsley or chives, chopped for garnish
Instructions
Prep the Ingredients: Wash and halve the baby potatoes. Pat the chicken breasts dry and season with garlic powder, smoked paprika, salt, and pepper.
Layer in Crockpot: Place the chicken breasts at the bottom of the crockpot, followed by the baby potatoes. Sprinkle the ranch seasoning mix evenly over the top.
Mix and Pour: Whisk together chicken broth and softened cream cheese in a bowl until smooth. Pour this mixture over the chicken and potatoes.
Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fully cooked (165°F internal temperature) and the potatoes are tender.
Add Parmesan: Sprinkle Parmesan cheese on top during the last 15 minutes of cooking for a rich, cheesy finish.
Serve: Garnish with fresh parsley or chives and serve hot. Spoon the creamy sauce over each serving for extra flavor.
