For the Crust:

  • 1 ½ cups graham cracker crumbs
  • 1/3 cup melted butter
  • 2 tbsp granulated sugar

For the Cheesecake Filling:

  • 24 oz cream cheese, softened (3 packages)
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup sour cream
  • 1 tsp vanilla extract

For the Cinnamon Swirl:

  • ½ cup brown sugar
  • 1 tbsp ground cinnamon
  • ¼ cup melted butter

For the Icing:

  • 1 cup powdered sugar
  • 23 tbsp milk
  • ½ tsp vanilla extract

Instructions

  • Prepare the Crust:
    • Preheat your oven to 325°F (163°C).
    • In a bowl, mix the graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of a springform pan. Set aside.
  • Make the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth.
    • Add the eggs one at a time, beating after each addition.
    • Mix in the sour cream and vanilla extract until fully combined.
  • Prepare the Cinnamon Swirl:
    • In a small bowl, combine the brown sugar, cinnamon, and melted butter. Stir to create a syrupy mixture.
  • Assemble the Cheesecake:
    • Pour half of the cheesecake filling over the crust. Drizzle half of the cinnamon swirl mixture over the filling and use a knife to gently swirl. Repeat with the remaining filling and cinnamon swirl.
  • Bake:
    • Place the springform pan in a water bath and bake for 55–60 minutes, or until the edges are set but the center is slightly jiggly.
    • Cool the cheesecake completely in the pan, then refrigerate for at least 4 hours or overnight.
  • Prepare the Icing:
    • In a bowl, whisk together powdered sugar, milk, and vanilla extract until smooth. Drizzle the icing over the chilled cheesecake before serving.
