Ingredients

2 cups fresh or frozen blueberries

1 cup cottage cheese (full-fat or low-fat)

1 cup rolled oats

2 large eggs

1/3 cup honey or maple syrup

1/2 cup milk (dairy or plant-based)

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp cinnamon

Pinch of salt


Instructions

Preheat Oven: Heat the oven to 375°F (190°C). Grease an 8×8-inch baking dish with butter or non-stick spray.

Mix Wet Ingredients: In a mixing bowl, whisk together the eggs, honey (or maple syrup), milk, and vanilla extract until smooth.

Combine Dry Ingredients: Stir in oats, baking powder, cinnamon, and a pinch of salt.
